CINNAMON ANISE COOKIES
2 cups shortening
1 cup plus 3 tablespoons sugar, divided
2 eggs
1/2 cup orange juice
2 teaspoons anise seed
6 cups all purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
Cream shortening and 1 cup sugar.
Beat in eggs, orange juice, and anise seed.
Combine the flour, baking powder, and salt; gradually add to creamed mixture. Cover and refrigerate for 2 hours or until easy to handle.
Combine cinnamon and remaining sugar. Roll the dough to 1/8 inch thickness, cut with 2-inch cookie cutter dipped in flour. Sprinkle with cinnamon sugar.
Bake at 375 degrees for 8-10 minutes. Cool on wire racks.
