Recipe: Orange Waldorf Salad

Salads - Fruit, Gelatin
Orange Waldorf Salad
Source: Sunkist Growers, Inc.
Makes 6 servings (about 5 1/2 cups)

grated peel of 1/2 orange
4 oranges, peeled, cut into bite-size pieces
1 red apple (medium), unpeeled, cut into bite size pieces
3/4 cup celery, sliced
1 cup miniature marshmallows
3 tbsp light sour cream
3 tbsp low calorie (fat and cholesterol free) mayonnaise
2 tbsp sliced natural almonds
1/8 tsp ground cinnamon

In large bowl, combine all ingredients; chill. Serve on salad greens, if desired.
