I also really likt the Macaroni Grill's orzo with spinach...enough that I kind of make my own version so there is no real recipe. I just cook the orzo according to the package directions. I saute some finely chopped garlic in olive oil being careful not to burn it. (It might be safer to use olive oil already infused with garlic??!?) I put the cooked, drained orzo in the pan (I ususally use a frying pan) I pick over fresh baby spinach & toss it with the orzo, garlic & olive oil until it wilts some. You can cover it with a lid for a brief time to help with the wilting. Just use tongs to keep tossing & mixing the spinach. The last time I ate at the Macaroni Grill, I noticed that there was chopped red pepper (like a bell pepper) in the dish. I don't think that it was roasted red pepper because it wastn't soft like roasted pepper would be. I think it was maybe lightly sauteed with the garlic in the olive oil before the orzo & spinach were added. I was waiting to see if you got any replies for the actual recipe. We don't get to eat at The Macaroni Grill too often since the nearest one is in Hartford, Connecticut which is about 1 1/4 hours from our house. If we have to go to the airport, we sometimes go since it is not too much further. I hope that this helps & that maybe it is close to the recips you were looking for.
