Recipe: Oscar Relish

Preserving - Pickles, Relishes

Oscar Relish

8 cups chopped fresh peaches
8 cups chopped ripe tomatoes
2 cups sweet green peppers, diced
1 T. red hot peppers, ground
2 cups ground onions
4 cups light brown sugar, firmly packed
2 cups cider vinegar, 5% acidity
1/2 T. salt
4 T. pickling spices

Peel and pit peaches. Chop into small pieces. Peel and chop tomatoes into 1/2 inch pieces. Remove stem and seed peppers.Dice into 1/4 inch pieces. Peel onions and grind in food chopper. Greing red hot pepper.

Combine all ingredients in large 10 quart saucepan. Cook and stir 1 1/2 to 2 hours until it reaches desired thickness.

Pack into hot jars, leave 1/2 inch headspace. Remove air bubbles. Wipe jar rims. Adust lids. Process in water bath canner for 10 minutes.
