I enjoy fishing, and one of my favorite ways to prepare fresh trout is to pan fry the fillets. It is really quite a simple process.
You just dredge the fillets in seasoned flour (seasoned however you like) and fry them up in a skillet with just a little margarine or oil. You cook them over medium heat for a few minutes per side and you've got a tasty dish! It is very quick-cooking. I prefer this method because it really allows the flavor of the fish to come through without being overpowered by seasonings. It cooks up quite light, and not at all greasy.
If you are concerned about fat, you may be able to use a good nonstick cooking spray, although I have never tried that.
This method will work well with any light tasting, mild, fish fillet such as crappie, trout, or walleye.
