Apples Baked in Red Wine
6 baking apples, cored
2 Tablespoons freshly squeezed lemon juice
1/2 cup sugar
4 Tablespoons raisins
2 Tablespoons honey
3 cups red wine
Preheat oven to 375 degrees F.
Put the apples in a baking dish just large enough to hold them. Pour lemon juice over the cored centers.
Mix the sugar with the raisins and fill the cored apple centers with this mixture. Spoon some honey on each apple and pour the wine around the apples.
Bake 45 minutes to 1 hour, or until apples can be pierced easily with a fork and the tops are lightly browned. Remove apples from baking dish and set aside, keeping them warm.
Boil down the wine sauce until thick and pour it back over the apples. Serve warm or at room temperature.
Makes 6 servings.
