Recipe: Party Potatoes

before if you like. It is really delicious and left overs good as potato patties for breakfast.


PARTY POTATOES

5 lb potatoes, peeled
1/2 pint sour cream
8 oz pkg cream cheese
1/4 tsp pepper
1/8 tsp garlic salt
1 tsp salt (or to taste)
1/4 tsp onion salt
2 tsp chives, chopped
2 tblspoons Butter

Cook peeled potatoes in boiling salted water until tender (cut in 4th). Drain and mash until smooth. Add sour cream, cream cheese, pepper, salt and pepper, beat until light and fluffy. Place potatoes in greased 2 qt casserole and bake at 350 for 30 minutes (bake covered the first 15 minutes)

Swirl potato mixture with the back of a spoon to make a circular or meringue-like pattern. sprinkle with paprika and run briefly under the broiler. For an autumn touch or your thanksgiving buffet, heap potatoes into a hollow pumkin or squash shell.

Alternate methods: Instead of baking, the dish may be prepared just before dinner and served immediately as mashed potatoes in a bowl. Or, prepare as mashed potatoes in advance and microwave in a 2 qu casserole until heated through.

Note: This dish may be made ahead and refrigerated or frozen for up to 2 weeks.

Note: a pinch of baking soda added to the mashed potatoes will make them fluffier. ENJOY!
