Make-Ahead Mashed Potatoes

Ingredients:

12 potatoes (about 3 1/2 lbs.)
1/4 tsp. salt
4 green onions
1 four oz. (125 g) package cream cheese, at room temperature
1 cup light sour cream
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
pinch nutmeg
2 tbsp. butter
1/4 cup freshly grated Parmesan cheese

Instructions:

- Place peeled in a saucepan. If potatoes are large, cut in half so they are all approximately the same size. Cover potatoes with water and add 1/4 tsp. salt. Cover and bring to a boil. Cook potatoes until tender, about 20 minutes.

- Meanwhile, butter a 10 cup casserole dish. Thinly slice green onions and place in a small bowl. Cut cream cheese into small pieces and add to onions along with sour cream and seasonings.

- Drain potatoes. Place in a mixing bowl with butter. Mash with a potato masher or fork. Add cream cheese mixture and beat with an electric mixer until light and fluffy.

- Spoon mixture into buttered dish. Smooth top and sprinkle with Parmesan cheese. (If making ahead, cover and refrigerate at this point.

- Preheat oven to 350F. Place casserole dish in centre of oven. Bake potatoes, uncovered until hot and golden, about 40 to 50 minutes.
