FRESH CORN SALAD

Makes 8 cups
6 ears of sweet corn
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 red onion, minceed
1/2 cup cilantro, chopped
1/4 cup lime juice
1/4 cup olive oil
salt and pepper to taste
Cut the fresh corn off the cob and steam, covered, for 3-6 minutes in 1/4 cup water. Remove lid and cook, stirring, 2 minutes more till water evporates. Toss corn with all other ingredients and chill.
