Pasta Salad
2 400 gram bags of rotini noodles, coloured or plain
5 large carrots, peeled and cut into slices
5 celery sticks, cleaned and cut into slices
2 each green, red, yellow sweet peppers
5 tomatoes
1 head broccoli cut in florette, stems peeled and cut in slices
1 small head cauliflower, cut in florettes (roses)
dressing
1 liter mayo light or regular
1 cup oil
2 cups vinegar
2 tsp salt, pepper and sugar
2 tsp mustard
2 large onions, diced very small
1 bunch fresh dill, washed and chopped really fine.
Cook the noodles in boiling water with salt. Five minutes before noodles are ready add the carrots and broccoli stems. After 2 minutes add the cauliflower and broccoli; drain and rinse under cold water until really cold.
Mix all the ingredients in a large bowl (except for the oil). Use whip or mixer to thoroughly blend the ingredients, then slowly add the oil so it becomes a thicker consistency. Taste the dressing and add more salt if necessary.
Cut the peppers in strips, and the tomato in wedges. Mix the pasta and vegetables with the dressing and let stand for at least one hour. Before serving stir the mixture again. If it looks to "thick" you can add a tsp of water or vinegar.
