Recipe: Pasta with Shrimp and Artichokes (not Harry's Bar recipe)

Main Dishes - Pasta, Sauces
PASTA WITH SHRIMP AND ARTICHOKES

1 red onion, sliced
1 Tbsp. olive oil
1/2 tsp. garlic, chopped
2 tomatoes, chopped
Salt and pepper
1/2 lb. peeled shrimp
1 can artichoke hearts, drained
1/2 lb. pasta, cooked and drained
TO SERVE:
Fresh parsley, chopped
Grated Parmesan cheese

Saute onions in olive oil until tender.

Add garlic and cook 2 more minutes.

Add tomatoes, salt and pepper and heat 5 minutes.

Reduce heat, add shrimp and simmer until they are pink.

Add artichokes and heat through.

Toss cooked pasta until the sauce is blended.

TO SERVE:
Place in serving bowl. Top with chopped fresh parsley. Top each serving with grated parmesan, if desired.
