Recipe: Peach Delight Bran Muffins

I found this recipe in a "Recipes from Country Inns" cookbook.

PEACH DELIGHT BRAN MUFFINS

Nonstick spray coating (optional)
1 1/2 cups whole bran cereal buds
1 cup whole bran cereal shreds
1/2 cup light or dark raisins
3/4 cup sugar
3/4 cup buttermilk
1/4 cup cooking oil
1 egg
1 1/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped, peeled fresh peaches or chopped canned peaches, drained*

Spray eighteen 2 1/2" muffin cups with nonstick coating or line muffin cups with paper bake cups; set aside.

In a small bowl combine bran buds, bran shreds, and raisins. Pour 1/2 cup boiling water over mixture; let stand for 5 to 10 minutes.

Meanwhile, in a large bowl beat together sugar, buttermilk, cooking oil, and egg till combined.

In a small bowl stir together flour, baking soda, and salt. Add flour mixture to egg mixture. Stir just till moistened. Stir in bran mixture. Fold in peaches.
Spoon batter into the prepared muffin cups, filling each 3/4 full. Bake in 350 degree oven about 20 minutes or till tops spring back when lightly touched. Makes 18 muffins.

*Note: you may substitute fresh blueberries or raspberries, or chopped, peeled
pineapple, apples, or apricots for the peaches.
