Recipe: Penne Pasta with Fresh Tomatoes & Basil

Margo, it's my pleasure! Here's a "Cooking Light" recipe that quick and good. I think it's really good and filling "as is" but you can add cooked chicken to it. (My husband prefers pasta dishes that have "meat" included - they seem more substantial to him.)

PENNE PASTA WITH FRESH TOMATOES & BASIL
(3 Servings)

5 ripe plum tomatoes
1/2 cup chopped fresh basil
1/4 cup halved ripe olives
1 clove garlic, minced
1-1/2 Tbs olive oil
1 Tbs balsamic vinegar
1/4 tsp salt
1/8 tsp freshly ground black pepper
6 ounces penne pasta, uncooked
1/4 cup crumbled feta cheese

Combine first 8 ingredients in a medium bowl; toss well. Cover and let stand 15 minutes.

Cook pasta according to package directions, omitting salt and fat; drain well. Add pasta to tomato mixture; toss gently. Transfer to a serving dish, and sprinkle with feta cheese.

Calories 345; Fat 12.1g; Fiber 3.2g.
