Recipe: Pepper Jelly for Ellen Cape Cod

Hi Ellen:-) This recipe is from The Southern Junior League Cookbook which has recipes from several of the Southern Junior League cookbooks. This recipe is also from Gator Country Cooks - The Junior League of Gainesville, Florida. Since this recipe only calls for green peppers, you could use red and green jalapenos and red and green bell peppers.

Pepper Jelly

3/4 c. chopped hot green pepper (jalapeno)
3/4 c. chopped sweet green pepper
1/4 c. cider vinegar
6 c. sugar
1 c. cider vinegar
8 ounces liquid pectin
Red or Green food coloring

Put peppers in blender jar. Add 1/4 c. vinegar and blend until thin and soupy. Pour in pot and add sugar and 1 c. vinegar. Bring all to a boil and then remove from heat and skim.

Add pectin and food coloring. Reheat and boil hard for 1 minute.

Remove from heat and fill jars to 1/2 inch from top and seal with paraffin.

Serve with pork, ham, or turkey. Also good on crackers with cream cheese.
