Recipe: Pepper Jelly and Green Hot Pepper Jelly

These 2 recipes are from Talk About Good, The Service League of Lafayette (LA).

Pepper Jelly

1/3 c. hot red or green peppers
1 1/3 c. bell peppers
6 1/2 c. sugar
1 1/2 c. wine cider vinegar (?? I'm not sure about this. Isn't vinegar either cider vinegar or wine vinegar? I think I'd just use cider vinegar since that is what all the other recipes call for.)
1 small bottle Certo
2 or 3 Tbs. green or red food coloring (This seems like an excessive amount of food coloring??!?)

Seed peppers and grind or chop. Mix peppers with sugar and vinegar. Bring to a boil and boil 1 minute. Cook about 5 minutes, then add Certo. Put in jelly glasses.

Important! Wear rubber gloves while cleaning and preparing peppers.

Green Hot Pepper Jelly

1/4 c. ground hot green peppers(remove seeds)
3/4 c. ground bell peppers(remove seeds)
1 1/2 c. apple cider vinegar
6 1/2 c. sugar
1 bottle Certo

Important: Wear rubber gloves while cleaning and preparing peppers for jelly.

Grind or cut very fine the hot peppers and bell peppers. Pour juice over peppers. Add sugar and vinegar and mix well in large saucepan. Boil 10 minutes. Remove from heat and add Certo. Stir well. Add red or green food coloring. Cool slightly and put in glass jars. Turn upside down to seal.
