Recipe(tried): Pimento Cheese Spread
Appetizers and Snacks Pam,
This is my favorite pimento cheese spread, simple and good. You can substitute American cheese for a very mild, "trashy" version. I have also seen kickier versions made by adding any of the following, to taste: chopped scallions, chopped yard onions (the ones that spout up in your lawn, but only if you use no pesticides), minced garlic, Tabasco sauce, and Worcestershire sauce. Some people add evaporated milk for creaminess. Some add a little sugar. Delicious in sandwiches and on crackers.
PIMIENTO CHEESE, FANCY OR TRASHY
1 7-ounce jar diced pimientos, with juice
1 pound extra-sharp Cheddar cheese or processed American cheese, coarsely grated
1/2 to 1 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
Pour pimientos along with juice onto a plate. Mash with fork into small pieces. Transfer to mixing bowl. Add remaining ingredients. Stir to make chunky paste. Keeps in refrigerator.
