Pineapple Upside Down Cake
The All Butter Fresh Cream Sugar-Packed Baking Book
Topping:
3/4 cup (lightly packed) brown sugar
1/2 tsp. salt
3 Tabls. unsalted butter, melted
1 1/2 cans (20 oz. each) pineapple chunks, patted dry with paper towels, then wrapped in more paper towels, and set in a bowl for several hours
CAKE:
1 cup all-purpose flour
1/2 tsp. baking soda
1/2 tsp baking powder
1/4 tsp. salt
6 Tabls. (3/4 stick) UNSALTED butter, at room temp.
1 cup granulated sugar
1 1/2 tsp. vanilla extract
2 large eggs, separated, at room temp.
1/2 cup buttermilk, at room temp.
(1) Preheat oven to 350.
(2) For the topping, mix the brown sugar, salt and butter in a med. bowl with spoon. Add the pineapple and toss the chunks in the mixture.
(3) Spread the topping in an 8-inch square pan & set aside.
(4) For the cake, sift flour, baking powder, baking soda and salt together in small bowl.
(5) Cream the butter, 3/4 cup of the gran. sugar, and the vanilla in a med.-sized bowl with an electric mixer on med. speed until light and fluffy, about 2 min. Stop the mixer once or twice to scrap the bowl with spatula.
(6) Add the egg yolks & beat on low until incorpporated.
(7) With mixer on low add 1/2 the dry ingred. to the butter mixt. & blend 10 seconds.Add the buttermilk & mix 8 sec. Fold in the rest dry ingred. by hand. In another med. bowl beat egg whites until frothy. Gradually add 1/4 cup sugar & beat til soft peaks. Stir in 3rds to the remaining mixture. Spread the batter evenly over the pineapple & place the pan in the oven on the rack just below the center. The higher heat allows the topping to caramelize better. Bake until top is golden & springs back to the touch and tester comes out clean (about 50 min.) Remove from oven and allow it to cool for about 2 hours. Run a frosting spatula around the sides & turn upside down on plate. Serves 9 - 12.
Now: that's 1 recipe, like I said I've got lot's more. Sorry it was so long, this cookbook is good but really gives alot of details. I "kinda" started shortening it toward the end I thought you'd be through with your dinner party before I could type it all in! Let me know if you want more. Good Luck !
