Recipe(tried): Polynesian Meatballs

This recipe for Polynesian meatballs is the best ever. I use this meatball recipe for all recipes that call for meatballs. The secret ingredient is peanuts in them.

Polynesian Meatballs

1 beaten egg
1/4 cup fine dry bread crumbs
2 tbsp snipped cilantro or parsley
2 cloves garlic minced
1/8 tsp ground red pepper
1 lb lean ground beef( I use lean chuck)
1/4 cup finely chopped peanuts

In medium mixing bowl combine egg, bread crumbs, cilantro, garlic, red pepper and 1/4 tsp salt.

Add beef and peanuts and mix well. Shape into 1 inch meatballs, place in a shallow baking dish and bake in a 350 degree oven for 20 minutes or till no longer pink. Remove from oven and drain.

I use them in spaghetti, sweet and sour meatball and swedish meatballs and everyone that has ate them, love them. I hope you enjoy them also.
