SAVORY LEMON VEGETABLES
6 slices bacon, cooked and crumbled, reserving 1/4 cup drippings
1 pound carrots, pared and cut into 2-inch pieces
1 medium head cauliflower, core removed
FOR THE SAUCE:
1 cup finely chopped onion
1/2 cup ReaLemon Lemon Juice from Concentrate
1/2 cup water
4 teaspoons sugar
1 teaspoon salt
1 teaspoon thyme leaves
Chopped parsley (for garnish)
In large saucepan, cook carrots and cauliflower in small amount of water until tender.
Meanwhile, in medium skillet, cook onion in reserved drippings until tender. Add ReaLemon brand, 1/2 cup water, sugar, salt and thyme; bring to a boil.
Drain carrots and cauliflower; arrange on serving dish. Pour warm sauce over vegetables. Garnish with bacon and parsley. Refrigerate leftovers.
MICROWAVE:
Cook bacon, reserving 1/4 cup.drippings. On large glass platter with rim, arrange cauliflower and carrots. Cover with vented plastic wrap; cook on 100% power (high) 14 to 16 minutes. In 1-quart glass measure with handle, cook reserved drippings and onion on 100% power (high) 1 minute. Add ReaLemon brand, water, sugar, salt and thyme. Cook on 100% power (high) 5 1/2 to 6 minutes or until sauce boils. Proceed as above.
