Recipe: Simple Autumn Rice Pilaf with Pomegranate

SIMPLE AUTUMN RICE PILAF WITH POMEGRANATE

1 (6 ounce) package long-grain and wild rice mix
1 tablespoon olive or vegetable oil
1 medium apple, cored and chopped
1 cup chopped celery
1/2 cup chopped red onion
1/2 cup chopped raisins or dates
1/2 sliced or slivered almonds
1/2 cup pomegranate juice
1/2 cup pomegranate seeds

Prepare wild rice mix according to package instructions.

Heat oil in medium-size skillet and saute apple, celery and onion 3 minutes or until tender.

Stir in raisins and almonds and cook 1 minute. Remove from heat. Stir sauteed mixture into cooked rice, adding pomegranate juice and seeds.

(This mixture can also be used to stuff a 5- to 7-pound roasting hen, two (3 1/2-pound) roasting chickens, or an 8-pound turkey.)
