ACORN SQUASH WEDGES WITH CREAMED ONIONS
3 acorn squash
Salt and pepper (to taste)
1 tbsp butter, melted
1 tbsp all-purpose flour
3/4 cup milk
1 (16 oz) can small whole onions, drained
2 tbsp chopped pimientos
Wash squash, and cut into quarters; remove seeds and membrane. Place in a lightly greased 2 quart shallow casserole, and sprinkle with salt and pepper.
Cover and bake at 350 degrees F for 40-50 minutes or until squash is tender.
Meanwhile, combine butter and flour in a saucepan, blending until smooth. Gradually add milk; cook over low heat, stirring constantly, until smooth and thickened. Stir in salt, onions and pimiento.
Spoon sauce over cooked squash.
Return to oven, and bake 10 additional minutes.
Makes 8 servings
