Popeye Chicken Casserole

This has been a favorite dish everywhere I've served it for the last 10 years, and was given to me by a boss. So easy, she recited it from memory.

She originally said to use whole chicken breast fillets, but to serve to a large group of people at a buffet, for instance, just cut them into nice chunks and continue from there:

Popeye Chicken (because of the spinach)

Chicken breast fillets, at least one per person, baked (Toss in microwave while working up the other ingredients)
2 boxes frozen chopped spinach; thaw, drain, squeeze out excess moisture
2 cans cream of celery soup OR cream of chicken OR cream of mushroom
2 cups mayonnaise
1 Tbsp. curry powder (more to taste)
Shredded cheddar cheese
Corn flakes crumbs
Parsley flakes

Grease a casserole. Press spinach in bottom in an even layer. Place baked chicken on spinach. Combine mayo, soup, curry. Spread over chicken evenly. Cover top with cheese. Sprinkle corn flakes crumbs over top, then parsley. Bake uncovered at 350 about 35-40 minutes.

Funny how many people think this contains mustard, because the curry makes the soup/mayo mixture turn yellow. Keeps folks guessing--but they love it!
