Scalloped Tomatoes

This is one of my favorite tomato dishes. You can omit the bacon if you'd like it to be a vegetarian dish.
3 slices bacon, chopped
2 cups cubed French bread (1/2-inch cubes)
16 ripe plum tomatoes, skinned and cut into 1/2-inch cubes
or 2 (28 oz.) cans of whole tomatoes, drained and cubed
2 cloves garlic, minced
2 tablespoons sugar
salt and pepper
1/2 cup shredded fresh basil
1/2 (or more) cup of parmesan cheese
Preheat the oven to 350.
Cook chopped bacon until almost done over medium heat, add bread cubes stirring to coat evenly with the fat. Saute until lightly browned all over, 5 to 7 minutes. (If making for a vegetarian, leave out bacon. Saute bread in olive oil.)
Add the tomatoes, garlic, and sugar to the pan. Cook, stirring frequently, 5 minutes. Season with salt and pepper. Then stir in basil and remove from heat.
Transfer tomato mixture to shallow 1 1/2 quart casserole. Sprinkle cheese over top. Bake uncovered until lightly browned, about 35 to 40 minutes.
