PORK AND TWO POTATO BAKE
"This recipe roasts potatoes and meat together for a one-dish meal that's fast and easy to prepare."
2 potatoes, sliced
1 sweet potato, peeled and sliced
1/2 cup finely chopped onions
1/2 cup reduced-fat chicken broth
1/2 cup unsweetened applesauce
2 cloves garlic, minced
1/4 black pepper
1/4 paprika
1/4 dried thyme
3/4 lb. pork tenderloin, sliced into 4 equal pieces
In a shallow baking dish, arrange potatoes. Combine onions, broth, applesauce and garlic in a bowl. Pour over potatoes. Cover dish with foil.
Bake at 375 degrees F for 20 minutes. Remove foil and stir potatoes. Finish cooking casserole or cool it slightly, cover and refrigerate until next day.
To finish cooking:
In a cup, combine pepper, paprika and thyme. Arrange pork over potatoes and sprinkle with seasoning mixture.
Bake, uncovered, until pork is tender, about 20 minutes.
Makes 4 servings
