Recipe: Pork Chops with Honeyed Sweet Potatoes

Hi,I am posting this tonight as it will be a busy day tomorrow.Havent made this particular recipe before, hope it will be as good as I assume.Also with this we will be having Buttered Asparagus & leftover Strawberry Nut Salad. Have a great Wednesday!

Wednesday Dinner:

Pork Chops with Honeyed Sweet Potatoes
Serves 6

3 large sweet potatoes
6 pork chops, 3/4 inch thick
1/4c.sifted flour
2 tsp.salt
1/8 tsp.pepper
vegetable oil
1 Tbls.prepared mustard
1 Tbls.brown sugar
6 pineapple slices
6 green pepper rings,1/4 inch thick
6 onion slices,1/4 inch thick
1 c. pineapple juice
1 c.honey
3 Tbls.melted butter

Boil potatoes till soft,then cut in half & peel.Meanwhile,coat chops with mixture of flour,salt & pepper.Brown in vegetable oil.

Arrange chops in shallow baking dish.Spread with mustard & brown sugar.Top each chop with pineapple,green pepper & onion.

Pour pineapple juice over chops.Coat sweet potatoes with honey,melted butter & arrange around chops.

Bake covered at 350 degrees for 30 minutes,remove cover & bake 30 minutes longer or till chops are tender.
