Recipe(tried): Pork Fillet with Apricot Glaze

Main Dishes - Pork, Ham
PORK FILLET WITH APRICOT GLAZE

2 lb fillet
2 oz butter
1 onion sliced
1 tsp curry powder
1 tsp grated ginger
2 Tbls smooth apricot jam
2 Tbls soy sauce
1 Tbls lemon juice
1 medium tin apricot halves

Add onion, curry powder, jams/sauce and juice to melted butter in a pan, Stir gently to disolve jam. Place pork in an ovenproof dish and pour sauce over. Add drained apricots. Bake uncovered for 30 mins at 180c(350f).
Serve sliced and pour glaze over.
