PORK LOIN LAHAINA
1 (6 lb) pork loin roast (center cut)
1 (20 oz) can pineapple slices
1/4 cup honey
1/3 cup soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
Have butcher loosen chine (back) bone. Place fat side up, on rack in open roasting pan. Insert meat thermometer with bulb in thickest part not touching bone.
Roast in 325 degree F oven for 2 1/2 hours or until 170 degrees F internal temperature is reached on thermometer.
Meanwhile, drain pineapple and reserve all syrup. Combine syrup with honey, soy sauce, garlic and ginger; pour over pineapple to marinate.
Brush pork with marinade every 10 minutes the last half hour of cooking.
Remove to serving platter, cut into 10 portions. Insert pineapple between each portion. Heat remaining marinade to a boil and serve with pork.
