PORK ORIENTAL AND VEGETABLES
1/2 pound boneless pork shoulder, 1/4x1/2 2-inch strips
1 small onion, peeled and cut lengthwise into thin slices
2 tablespoons reduced-sodium soy sauce
1 teaspoon sherry or water
1 teaspoon cornstarch
1/8 teaspoon ground ginger
1 Dash black pepper
6 ounces fresh pea pods, rinsed and stringed
1 medium carrot, shredded
6 medium mushrooms, thinly sliced
1 tablespoon water
Hot cooked rice (optional, for serving)
Combine pork strips, onion, soy sauce, sherry, cornstarch, ginger and pepper in microwave-safe 2-quart casserole. Marinate 10-15 minutes.
Microwave pork and onion mixture, covered with waxed paper, on HIGH, 2 1/2 to 3 1/2 minutes, stirring well after each 1 minute.
Stir in fresh snow peas, carrot, mushrooms and water; cover with waxed paper. Microwave (HIGH) 1 1/2 to 2 minutes, stirring after each 1 minute, until snow peas are barely cooked.
Serve on rice.
