Recipe(tried): Potato Salad Dressing

Salads - Potato, Pasta


Greetings to Mrs. Food and all the rest of you:
I am going to post the salad dressing that I always use on potato salad. It was from my grandmother, with my own adaptation.....
Potato Salad Dressing:
1 c. sugar
1 c. vinegar
1 c. sweet pickle juice
1 heaping Tbsp cornstarch
1 heaping Tbsp prepared mustard
5 beaten eggs
1 qt. Salad dressing (Miracle Whip of any store brand)
salt, pepper & Watkins Potato Salad seasoning mix (I use about 2-3 tsp)
Beat eggs well. Mix together sugar & cornstarch and add to eggs along with all the other ingredients except the salad dressing and Watkins Potato Salad Seasoning. Cook until thick. Cool to room temperature. Fold into the cooked mixture: 1 qt. salad dressing and the potato salad seasoning. I store this in the ref. and use as needed. It keeps very well and is delicious.
I think one hint for good potato salad is to cool the cooked potatoes to room temp. without refrigeration. I usually use diced cooked eggs, onion, sweet pickle relish, & radishes in my potato salad. Decorate the top with sliced hard-boiled eggs/sliced stuffed olives/snipped fresh parsley.
