Recipe: Presto Romano Chicken

PRESTO ROMANO CHICKEN

1 (8 oz) package linguini, uncooked
2 cans (14 1/2 oz each) cans Del Monte diced tomatoes with basil, garlic and oregano
2 tablespoons cornstarch
4 boneless skinless chicken breast halves
1 tablespoon olive oil
grated parmesan cheese (for garnish)

Cook pasta according to package directions; drain and keep warm.

Combine tomatoes and cornstarch; stir to dissolve cornstarch; set aside.

Season chicken with salt and pepper, if desired. Brown chicken in oil; drain.

Stir in tomato mixture. Cover and simmer 15 minutes or until chicken is cooked, stirring occasionally.

Serve chicken and sauce over pasta, and sprinkle with Parmesan cheese, if desired.
