Recipe: Puffed Rice Candy (using sugar, molasses, and butter)

PUFFED RICE CANDY

2 cups granulated sugar
2 cups water
2 tbsp. white vinegar
5 oz. puffed rice cereal
4 oz. butter or margarine
2 tbsp. molasses

Combine sugar, water, and vinegar in a very large pot. Heat to boiling over medium high heat, stirring constantly. Boil 10 minutes.

While the sugar mixture is cooking, spread puffed rice on a baking sheet and place oven at 300 degrees to crisp, stirring occasionally.

Reduce heat and add butter and molasses to the sugar mixture. Stirring frequently, cook to 260 degrees on candy thermometer. Watch carefully so mixture doesn't burn.

Remove from heat and quickly; add warm puffed rice; mix until well coated.

Spread mixture on cookie sheet to cool. Break into pieces.
