Recipe: Pumpkin Cheese Bars (using pound cake mix and sweetened condensed milk)

Pumpkin Cheese Bars

1 (16 oz.) pkg. pound cake mix
3 eggs
2 Tbsp. margarine or butter, melted
1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can Eagle Brand sweetened condensed milk
1/2 tsp. salt
1 (16 oz.) can (about 2 cups) pumpkin (not pie filling)
1 cup chopped nuts
4 tsp. pumpkin pie spice

Preheat oven to 350 degrees. Grease a 15 x 10-inch jelly roll pan.

In large bowl on low speed, combine cake mix, 1 egg, margarine and 2 teaspoons pumpkin pie spice until crumbly. Press into prepared pan.

In large mixer bowl beat cheese until fluffy. Gradually beat in Eagle Brand milk, then remaining 2 eggs, pumpkin and remaining spices and salt. Mix well; pour over crust. Sprinkle with nuts.

Bake 30 to 35 minutes. Cool; cut into bars. Refrigerate.
