Misc.Hi L.P., Here's a couple of recipes to try and/or use for your report. CHOCOLATE GRAVY: 3 heaping Tbls. cocoa, 3/4 cup sugar, 1 Tbls. flour, 2 cups milk. Mix cocoa, sugar and flour in skillet; stir in milk. Cook over med. heat until mixture thickens, stirring constantly. Serve with hot biscuits or pancakes. *I use whole milk, and add a little chocolate extract, butter flavoring and vanilla. The recipe is good as is although, my family likes it a bit richer. BARBECUE SAUCE FOR CHICKEN OR RIBS: 1 cup catsup, 1 cup chopped onions, 1 clove garlic, 1 Tbls. cocoa, 1 Tbls. liquid smoke, 1 Tbls. lemon juice, 1 Tbls. honey, 1/2 Tsp. ginger, pinch of pepper, 1 Tbls. brown sugar. For Ribs:(3 1/2 lbs. ribs) Sprinkle ribs with salt and pepper. Place fat side down on rack in shallow broiler pan. Bake at 400 for 30 min. In blender, combine sauce ingredients and mix until smooth. In saucepan, heat to boiling; cook, covered, 10 min. Sauce may be thinned with water if desired. Baste ribs with sauce. Lower heat to 325 and continue baking for one hour or until done. During baking time, turn and baste ribs with remaining sauce. This is for pork spareribs , cook longer, if using country style ribs. I usually grill but baking is great for a rainy day. FOR CHICKEN: Marinate 3 lbs. chicken in sauce prepared as above, for at leeast 1 hour, overnight is best. Bake uncovered at 375 for 1 hour. Or, grill. Baste often with sauce. WESTERN CHILI CON CHOCOLATE: 4 slices bacon, diced, 2 Tbls. oil, 1 cup chopped onion, 1 lb. lean ground beef, 1 (28 ox.) can crushed tomatoes, 1 - 3 Tbls. chili powder, 1 milk choclate bar, 1 1/2 tsp. garlic salt, 1 tsp. cumin, 1/4 tsp. pepper, 1 can (16 oz.) kidney beans,drained, 1/2 cup chopped green pepper. In heavy saucepan, Saute' bacon until light brown; stir in oil and onion. Add meat and fry until brown. Add tomatoes, chili powder, broken up chocolate bar, garlic , salt, cumin, and pepper; heat to boiling. Add kidney beans and green pepper. Simmer, covered , 20 min. Garnish with grated cheddar cheese and chopped green pepper if desired. Spice adjustments may be made to suit taste for hottness. *Can not taste chocolate. ( I have more that I'll post in a min. my computer is disconnecting itself and I have to keep typing this over and over. I'm not complaining , but I don't type that fast and don't mind helping . We have repairmen outside working on the lines and they are "messing" with my connection! I'll be back! If I have to do this over and over L.P.'s repport will be past due by the time I get in here! HA :-)
