SPICY PORK AND GREEN BEAN STIR-FRY
2 teaspoons sugar
1/2 teaspoon red pepper flakes
1/2 teaspoon ground ginger
2 teaspoons soy sauce
2 teaspoons sesame oil, divided use
1 teaspoon rice vinegar
1 pound boneless pork loin, cut into strips
2 cloves garlic, minced
3/4 pound fresh green beans, cut into 2-inch lengths (or 1 (10 ounce) package frozen cut green beans, thawed)
hot cooked rice (to serve)
Combine sugar, red pepper flakes, ginger, soy sauce, 1 teaspoon of the sesame oil, and rice vinegar in a small bowl, stirring well to dissolve sugar. Set aside.
Place a large nonstick skillet over medium-high heat; add the remaining 1 teaspoon sesame oil. Add pork and garlic to hot skillet, and cook 1 minute or just until pork is browned, stirring constantly.
Add green beans, and cook 4 minutes or until pork and beans are tender, stirring constantly.
Add soy sauce mixture to skillet and cook 1 minute, stirring well to coat pork and beans.
Serve immediately with rice.
