
1 1/2 tablespoons (unflavored) gelatine
1/4 cup cold water
1 cup sour pitted cherries, with juice
1/2 to 2/3 cup sugar
2 egg whites (pasteurized), beaten stiff
Soak gelatine in 1/4 cup cold water.
Drain the cherries. Heat the cherry juice with the sugar, then pour over the gelatine and stir until dissolved. Cool until beginning to stiffen, then add the cherries and the whites of eggs beaten stiff.
Mold in individual dishes and chill.
Serve with custard sauce made of the egg yolks.
Makes 5 servings
