Recipe: Rice Pilaf

Rice Pilaf

1 cup regular long grain rice
2 tbsp. butter
3/4 cup minced celery
3/4 cup minced onion
1 tsp. dried thyme
1 large bay leaf
2 1/2 cups hot chicken broth

Saute celery and onion in butter till almost soft. Add rice and continue to saute for about 5 minutes. Mix together broth, thyme and bay leaf. Slowly pour into rice mixture. Simmer for about 20 minutes or until rice has absorbed the liquid mixture.
