COUSCOUS SIDE DISH
2 1/2 cups chicken broth
2 cups couscous
1/2 cup green onion, chopped
1 cup fresh basil, thinly sliced
juice of 1 lemon
1 tsp lemon peel, grated
fresh cracked pepper (to taste)
Bring the broth to a boil in a large saucepan. Add the couscous and stir. Remove saucepan from heat, cover and let stand for about 10 minutes.
Fold in all other ingredients.
Can be served warm or at room temperature, cold with leftovers.
Makes 6 servings
