Recipe: Vegetable Rice Pilaf

VEGETABLE RICE PILAF

3/4 cup uncooked regular long-grain rice
1 (14 1/2 oz) can Swanson Chicken Broth*
1/4 teaspoon dried basil leaves, crushed
3/4 cup frozen mixed vegetables
1/4 cup chopped green or red bell pepper

Spray medium saucepan with cooking spray and heat over medium heat 1 minute. Add rice and cook 30 seconds, stirring constantly.

Stir in broth and basil. Heat to a boil. Reduce heat to low. Cover and cook 10 minutes.

Stir in vegetables and pepper. Cover and cook 10 minutes more or until rice is done and most of liquid is absorbed.

*One can (14 1/2 ounces) Swanson Vegetable Broth may be substituted for Swanson Chicken Broth
