Recipe: Roast Parsnips

ROAST PARSNIPS

1 pound parsnips, peeled, 1/2-inch dice cut
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Preheat oven to 375 degrees F.

Toss diced parsnips with olive oil, salt, and pepper.

Place in 13x9-inch baking pan and roast for 30 to 40 minutes, until lightly browned and tender when pierced with a thin skewer or knife tip.
