ROASTED GARLIC GRITS
1 large head garlic
Olive oil
4 cups water
1 teaspoon kosher salt
1 cup stone-ground grits
2 eggs
1/2 cup milk
Preheat oven to 350 degrees F. Liberally grease a 1/2-quart casserole.
Remove papery outer skin from garlic head and rub with olive oil. Place on baking sheet and bake 30 to 35 minutes, until soft. Set aside.
Put water and salt in a heavy saucepan and bring to a boil. Pour in grits and stir. Turn heat down and simmer, stirring frequently, 12 to 15 minutes, until the water is absorbed. Remove from heat and allow to cool slightly.
Squeeze garlic cloves to remove pulp. Place pulp in a blender with eggs and milk, and pulse until well-blended.
Add egg mixture to grits, stirring constantly. (If grits are too hot, add 1/2 cup of the grits to the egg mixture first and then add mixture to the grits.) Pour into a casserole.
Bake for 50 minutes, until set and golden.
