Recipe: Romanian Green and White Beans

Rumanian Green and White Beans

1 lb. dried white beans
3/4 lb. green beans
1/2 cup olive oil
2 onions
flour
2 tbsp. tomato paste
salt, pepper
parsley
2 tsp. vinegar
paprika
8 small pork sausages or 16 cocktail sausages

Wash the dried white beans and soak overnight.On the following day, simmer them in salted water until tender.

Clean the green beans, cut them into diagonal slices and cook in water for about 5 minutes. Cook the onion slices in hot olive oil, add the green beans and sprinkle with flour. Blend in the tomato paste, salt, pepper and chopped parsley. Add a little water and the vinegar. Simmer the green beans until tender and then add the cooked white beans. Season with paprika and top with the fried sausages. Let cocktail sausages simply warm up in the beans. You may sprinkle a few crushed leaves of savory into the vegetables when they are done.
