Recipe: Royal Stir-Fry (using carrots, peppers, spinach, broccoli, tofu, dried cherries)

Vegetable oil spray
1/2 cup chopped green onions
1 clove minced garlic
1/4 cup minced carrots
1/2 cup yellow bell pepper, deseeded and cut into thin strips
2 cups fresh baby spinach, washed and cleaned
3/4 cup chopped broccoli florets
1 cup firm tofu, cut into 1/2-inch cubes
2/3 cup roasted peanuts
1/2 cup dried tart cherries
2 tablespoons soy sauce
1 teaspoon minced fresh ginger
Cooked chicken, beef, or pork, shredded (optional)
Spray a large skillet with vegetable oil; heat skillet.
Add onions and garlic; cook, stirring, over high heat 2 minutes or until garlic is soft.
Reduce heat; add carrots, pepper, spinach and broccoli. Cook, stirring frequently until vegetables are just soft, about 2 to 3 minutes.
Cover; simmer 2 minutes.
Add tofu, peanuts, dried cherries, soy sauce and ginger. If desired, add chicken, beef or pork. Cook 2 to 3 minutes, stirring, until all vegetables are tender and mixture is hot. Serve over steamed jasmine or brown rice or whole wheat couscous.
If more sauce is desired, add 1/2 cup vegetable broth when adding tofu.
