Recipe: San Francisco Chicken (NOT K&S Cafeteria's)

Its not on the K & S Cafeteria recipe is not on the Internet. Here are some recipes for San Francisco Chicken that I found that you can experiment with. I am not sure if it is the same thing since I have never seen or eaten there. Good luck and please share your results with us.


SAN FRANCISCO CHICKEN

1 pounds boneless skinless chicken breasts, cut up into 2 inch pieces
cooking spray
2 Tbsp. olive oil
4 cloves garlic, minced
4 tablespoons soy sauce
4 tablespoons sherry or chicken broth
2 tablespoons dark brown sugar
1/4 teaspoons crushed red pepper
1 tablespoon cornstarch
2 tablespoons cold water

Coat large skillet with cooking spray, heat over medium high heat. Brown chicken pieces and remove to a plate. Add Olive Oil to pan and heat. Brown garlic in pan being careful not to burn. Once garlic is brown, add soy sauce, sherry, brown sugar and crushed red pepper. Return chicken to the pan and bring to a boil. Reduce to a simmer, cover and cook for about 15 minutes to make sure chicken is cooked through. When chicken is finished, remove to a plate again. Combine corn starch and cold water in a cup and add to sauce, stirring constantly until thickened. Serve chicken with sauce spooned over it. I usually serve this over a bed of egg noodles with broccoli on the side. Serves 4.


SAN FRANCISCO CHICKEN

4 Boneless chicken breasts (or boneless pork chops)
3 cloves garlic, minced (or 1/2 tsp. garlic powder)
4 tbsp. soy sauce
3 tbsp. packed brown sugar
1 1/2 cups chicken broth
1 tbsp. cornstarch

Lightly brown chicken breasts in a small amount of oil. Remove from pan and add garlic, soy sauce, brown sugar and 1 c. chicken broth. Stir to mix and return chicken to pan and cover. Simmer for a few minutes until the chicken is done (15-20 minutes or so). Remove chicken again and add remaining broth which has been mixed with cornstarch. Bring to a boil to thicken and return chicken to the pan, coating it well. Serves 4.
