Recipe: Raspberry Glazed Turkey Tenderloins (using raspberry jam, grilled)

RASPBERRY GLAZED TURKEY TENDERLOINS

1/2 cup seedless red raspberry jam
6 tablespoons raspberry vinegar
1/4 cup Dijon mustard
1 teaspoon grated orange peel
1/2 teaspoon dry or fresh thyme leaves
4 turkey breast tenderloins (about l 1/2 Tbs. total)

In a 1- to 1 1/2-quart pan, whisk together jam, vinegar, mustard, orange peel, and thyme. Bring to a boil over high heat; boil, stirring, until reduced by about 1/4 and slightly thickened (2 to 3 minutes) Reserve about 1/2 cup of the glaze to serve with the grilled meat.

Coat turkey pieces with some of the remaining raspberry glaze.

Place turkey on a lightly greased grill 4- to 6-inches above a solid bed of medium-hot coals. Cook, turning to brown evenly and basting frequently with glaze, 10 to 12 minutes or until done (165 degrees F).

Transfer turkey to individual plates. Pass reserved glaze to spoon over meat.
