Recipe: Sandwich Wraps (a few recipes)
SandwichesSharon ~ Quite a few nice-looking sandwich wrap recipes have previously been posted here on RecipeLink. You might do a search for the word wraps. Meanwhile, here are a few I spotted that look soooooo good. Hope they help. Kel

CHICKEN SALAD WRAPS
Makes 6 servings
2 (10 ounce) cans chunk chicken, drained and flaked
1/4 cup chopped onion
1/4 cup mayonnaise
4 tablespoons fresh salsa
salt and pepper to taste
6 (10 inch) flour tortillas
12 lettuce leaves
In a small bowl combine the chicken, onion, mayonnaise, salsa, salt and pepper. Mix together. Line each tortilla with two lettuce leaves, then divide chicken salad mixture evenly among each tortilla and roll up, or 'wrap'.

Turkey Wraps with Chipotle Mayonnaise
8 ounces thinly sliced turkey
sliced tomatoes
Gruyere or havarti dill cheese
crisp bacon slices
2 romaine lettuce leaves, center rib cut away
2 10-inch-diameter flour tortillas (plain or flavored)
Chipotle Mayonnaise
cup mayonnaise
c. sour cream
1 tablespoon fresh lime juice
1/4 t. pureed chipotle chilies in adobo sauce
1/4 teaspoon ground cumin
salt and fresh ground pepper -- to taste
Combine all ingredients and keep covered in refrigerator. Keeps for one week covered.
To Make Wraps:
Take one tortilla and spread some of the flavored mayo on, layer with turkey, tomato, bacon, cheese and lettuce, roll up enclosing filling by folding bottom half in and then folding sides over. Cut in half.

The Rio Grande Tortilla Wraps
1 can (15 oz.) ranch or Texas BBQ-style beans
1/4 cup honey
3 cups cooked, shredded pork roast
2 cups cooked rice
3 red or green jalapeno chiles, seeded and minced
(optional)
4 large flour tortillas, warmed
1 cup shredded lettuce
In small saucepan, combine beans and honey. Bring to a boil; reduce
heat and simmer for 5 minutes; mash beans coarsely with back of fork;
stir in pork, rice and chiles, if desired. To assemble wraps, lay
tortillas on work surface. Spoon 3/4 cup pork mixture down center of
each tortilla. Top each with 1/4 cup lettuce. Fold in sides to wrap
Note: Optional toppings include sour cream, grated cheese or salsa.

HAM WRAPS
1 package large flour tortillas
16 ozs. cream cheese -- softened
1/3 cup mayonnaise
2 tablespoons chopped green onions
1/4 cup chopped black olives
2 packages sliced cooked ham
Combine cream cheese, mayonnaise, green onions and olives. Spread thin layer of cream cheese mixture on top side of each tortilla. Arrange ham slices over cheese. Tightly roll up each tortilla; wrap individually in plastic wrap. Refrigerate for 3 hours to overnight. To serve, cut into 3/4 inch diagonal slices.
