Scalloped Apples and Raisins
Cooking the apples in the microwave first cuts down
the amount of baking time needed to prepare this easy
apple-raisin combination. This could double as a light
dessert with frozen yogurt.
3 tbsp granulated sugar
1 tsp ground cinnamon
6 cups thinly sliced tart apples, such as Granny
Smith
1/2 cup raisins
1 1/2 tbsp water
1/4 cup packed brown sugar
1 1/2 tbsp reduced-calorie tub-style margarine or
butter
1 tbsp dark corn syrup
1 1/2 cups fresh bread crumbs
In a small bowl, combine the granulated sugar and 1/2
teaspoon of the cinnamon. In a shallow 2 1/2-quart
oven-safe, microwave-safe casserole, mix the apples,
raisins, water and the sugar mixture. Cover and
microwave on high power for a total of 5 minutes; stop
and stir after 2 minutes.
In a medium bowl, combine the brown sugar and the
remaining 1/2 teaspoon cinnamon. Blend in the
margarine or butter and corn syrup with a fork. Stir in
the bread crumbs just until incorporated. Sprinkle
evenly over the apples.
Bake at 400 degrees F for 15 to 20 minutes, or until
the topping begins to brown and the apples are tender.
Serve warm.
