Recipe: Seafood Casserole (using half & half and milk)

SEAFOOD CASSEROLE

1/3 cup chopped onion
1/4 cup butter
1/4 cup flour
1 tsp. salt
1/2 tsp. pepper
1 cup half & half
1 cup milk
2 cups cooked rice
1 cup crab meat
1/2 lb. uncooked shrimp
5 oz. can water chestnuts
1 cup shredded cheddar cheese, divided use
2 tbsp. chopped pimento
2 tbsp. lemon juice

Preheat oven to 375 degrees F.

Saute onions in butter.

Add flour, salt and pepper. Gradually add half & half and milk, stirring constantly over low heat.

Stir in rice, crab meat, shrimp, water chestnuts, 1/2 cup of the cheese, pimento, and lemon juice. Spoon into casserole. Top with remaining cheese.

Bake at 375 degrees for 30 minutes.

Servings: 6 to 8
