MONKFISH WITH LEMON BUTTER
3 cups water
1 lb fresh monkfish fillets
FOR THE LEMON BUTTER:
1/2 (1 stick) cup butter, melted
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley
In frypan bring 3 cups water to boil. Add monkfish; cover and simmer 6-8 minutes. Carefully remove fish from water.
To make the Lemon Butter, in small bowl blend butter, lemon juice and parsley.
Serve fish immediately with Lemon Butter.
