Misc.On July 12th you had posted an intersting recipe for Carob Chip cookies. I liked the look of it, so I tried it, but with less butter/oil as you had requested. I didn't use the carob chips (didn't have any around at the time) and they came out terrific! Just thought you'd like to know that they are worth trying. Below is my version of the recipe using less fat. I based my substitutions on previous advice which Sarah had given me. She's the best.
Healthy Nut Cookies
Yield: 3 dozen
1 1/4 cup whole wheat flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons butter or low-calorie margarine
cup honey
2 eggs, beaten
1 teaspoon vanilla extract
1 cup chopped nuts - I used walnuts
non-stick baking spray
Optional: 1 cup carob chips
Preheat oven to 350.
Cream the butter, honey, egg and vanilla.
Add the dry ingredients to the creamed mixture and stir in the carob chips and nuts.
Drop by rounded teaspoons onto a lightly sprayed cookie sheet.
Bake for 10 to 12 minutes or until cookies are puffed and their bottoms are pale brown.
