ROASTED MAPLE CARROTS
1 tsp butter
4 large carrots, cut in matchsticks
salt and pepper (to taste)
1 1/2 tbsp maple syrup
Preheat the oven to 400 degrees F. Grease the bottom of a small roasting pan or a medium-sized ovenproof skillet with the butter.
Add carrots, salt and pepper and toss well to coat with the butter.
Roast the carrots for 10 minutes. Remove the pan from the oven and drizzle the maple syrup over the carrots.
Continue roasting the carrots until tender but not falling apart, 3 to 6 minutes.
Servings: 4
